HISTORY/ORIGIN:
Lumaconi are large pasta shells shaped like a snail's shell, originating in southern Italy. Their size and hollow shape make them ideal for stuffing and baking.
WHY IS IT WORTH IT?
- Bronze dies are used to shape this pasta, giving it a slightly rough surface that allows it to better absorb a variety of sauces.
- The slow and patient drying process preserves the natural flavor of the wheat and the authentic character of Italian pasta.
- The large hollow shape holds fillings and thick sauces perfectly.
PREPARATION:
Bring water to the boil and add salt. Add the pasta and cook for about 12 minutes, stirring occasionally. Drain and toss with your favourite sauce. Stuff with ricotta and spinach or minced meat, cover with tomato sauce and bake. If baking, cook a few minutes less.
