HISTORY/ORIGIN:
Spaghettoni are thicker than regular spaghetti and pair best with rich, hearty sauces. They are made from Senatore Cappelli, a heritage Italian durum wheat variety bred in the early 20th century and prized for its distinctive flavour.
WHY IS IT WORTH IT?
- Bronze dies are used to shape this pasta, giving it a slightly rough surface that allows it to better absorb a variety of sauces.
- The slow and patient drying process preserves the natural flavor of the wheat and the authentic character of Italian pasta.
- Senatore Cappelli wheat has a pronounced, slightly nutty taste and a golden colour.
PREPARATION:
Bring water to the boil and add salt. Add the pasta and cook for about 12 minutes, stirring occasionally. Drain and toss with your favourite sauce. Excellent with tomato, cacio e pepe or seafood sauces.
