Principles of the Vai Cacoa Project
One of the main principles of Vai Cacao is a short supply chain, uniting small farms in El Salvador and responsible, regenerative agriculture. This allows for a positive impact on the ecosystem of the cultivated land and at the same time strengthens the community, united by the love of cocoa. Such a farming principle has a positive impact on long-term cooperation, brings benefits to the environment and economic relations. The sustainable principles born from the project allowed the cocoa processing activities to be transferred to Elisa's native island - Sardinia. In the laboratory established here, the "bean-to-bar" process - the direct transformation of cocoa beans into chocolate bars - was further strengthened, and the production of ceremonial cocoa paste was perfected.
