Wow Cacao

Vai Cacao is a joint project of Juan Rafael (from El Salvador) and Elisa Parriciatu (from Sardinia), which has become an expression of respect for their roots. It all started in 2006, when Juan Rafael dedicated his time and energy to nurturing the family cocoa plantation in El Salvador and soon contributed to the creation of an association dedicated to the regeneration of El Salvador's "fino de aroma" cocoa. In 2015, Elisa joined this initiative - the connection with the land and respect for farming, cultivated since childhood in Sardinia, naturally became an important part of the direction of Vai Cacao. Elisa's goal and commitment is to ensure that each product is the result of sustainable agriculture, the highest quality, authentic craftsmanship and ethical values, revealing the transformative and regenerative power of cocoa.

Principles of the Vai Cacoa Project

One of the main principles of Vai Cacao is a short supply chain, uniting small farms in El Salvador and responsible, regenerative agriculture. This allows for a positive impact on the ecosystem of the cultivated land and at the same time strengthens the community, united by the love of cocoa. Such a farming principle has a positive impact on long-term cooperation, brings benefits to the environment and economic relations. The sustainable principles born from the project allowed the cocoa processing activities to be transferred to Elisa's native island - Sardinia. In the laboratory established here, the "bean-to-bar" process - the direct transformation of cocoa beans into chocolate bars - was further strengthened, and the production of ceremonial cocoa paste was perfected.

Sardinia is the second largest Italian island in the Mediterranean, famous for its wildlife, clear seas and strong local identity. Life on the island is slow, making it a place where naturalness and respect for the land are part of everyday life and the main principle of healing.

One of Vai Cacao's main products is ceremonial cocoa, the taste and preparation method of which invite you to return to Juan Rafael's ancestral roots and Mesoamerican traditions. Here, cocoa is presented in the form of cocoa paste. The essence of the product is minimal processing while maintaining the natural nature of cocoa.
